Ingredients for Menduo Recipe:
- 3 gallons of water
- Beef tripe, 2 ½ pounds
- Garlic cloves, 6, chop them
- White onion, 1 piece, chop it
- Salt, 1-2 tbsp
- Black pepper, 1 tbsp
- Dried oregano, 1-2 tbsp
- Red pepper, 2 tbsp
- Chile peppers
- Canned hominy, drained
- White onion, half piece, chopped
- Fresh cilantro, ¼ cup, chop them
- Lime juices from 2 fruit
Direction to cook Menduo recipe
- Prepare a large pot, boil 1 gallon of water. Add tripe into it and simmer the tripe for 2 hours. Don’t forget to skim off the floating fat with a spoon. Reduce the heat and drain the water. Pour fresh water into the pot and continue to cook the tripe for the next 2 hour. Drain the water again.
- Pour the remaining gallon; add the garlic, onion, and seasoning. Cook for 1 hour.
- Use your food processor to blend the peppers until looks smooth. Mix the mixture into the pot and add the remaining ingredients except for lime juice and cilantro which should be added when it is ready to be served.
